Tomorrow, on Help from My Friends Friday, Author Kylie Brant joins us to talk about her recent remodel. In anticipation of the event, I thought I’d share a recipe my son made me the last time I visited Colorado.
There’s actually a story behind this recipe. You see, in Colorado, there is one vegetable that will grow when all others will not. Want something to take over your garden? Plant zucchini. Problem is, I’m not a fan. Zucchini tastes bitter to me—I can even detect it in zucchini bread.
However, I do love yellow squash. Hence, the recipe I’m sharing with you. So, if you like yellow squash, and even if you want to ::grumble, grumble:: make yours with zucchini, I think you’ll enjoy this simple and fast way to complement your meals.
You will need:
Two to three yellow squash
One cookie sheet
Olive Oil (lightly cover cookie sheet)
Tony Cachere’s Creole Seasoning (season to taste–it’s spicy)
Slice squash, spread over cookie sheet, and bake at 350 degrees for 20 minutes. I served mine with salmon and a tossed salad. An easy peasy satisfying meal.
